- 1 cup All-Purpose Flour (or gluten-free flour)
- 1/2 cup Unsalted Butter (cold and cubed)
- 1/4 cup Granulated Sugar
- 1/4 teaspoon Salt
- 1 large Egg Yolk
- 2–4 tablespoons Ice Water
- 2 cups Fresh Blackberries (or raspberries/blueberries)
- 1/2 cup Granulated Sugar (adjust as necessary)
- 1 tablespoon Lemon Juice
- 2 tablespoons Cornstarch
- 1/2 cup Light Brown Sugar (or granulated sugar)
- 1 teaspoon Baking Powder
- 1 cup Pistachios (shelled and unsalted)
- 1/2 cup Unsalted Butter (cold and cubed)
- 1 large Egg
- 1 teaspoon Vanilla Extract
Instructions
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, combine 1 cup of flour, 1/4 cup sugar, and 1/4 teaspoon salt. Add 1/2 cup cold butter and mix until coarse crumbs form.
- Stir in 1 egg yolk and add ice water, mixing until the dough comes together.
- Press the dough into a greased 9×9 baking pan. Bake for 15-18 minutes or until golden, then cool.
- In a bowl, mix blackberries, 1/2 cup sugar, lemon juice, and cornstarch until blackberries are coated.
- In a food processor, blend pistachios until finely chopped. In another bowl, mix them with 1/2 cup cold butter, 1/2 cup brown sugar, 1 large egg, baking powder, and vanilla extract.
- Spread berry filling over the cooled crust, then pour the pistachio filling over it.
- Bake for an additional 25-30 minutes until set and golden.
- Cool completely in the pan, then slice and serve.
Notes
These bars can be made ahead of time and stored in an airtight container. They also freeze well for long-term storage.
