Description

Ingredients

  • 1 cup All-Purpose Flour (or gluten-free flour)
  • 1/2 cup Unsalted Butter (cold and cubed)
  • 1/4 cup Granulated Sugar
  • 1/4 teaspoon Salt
  • 1 large Egg Yolk
  • 24 tablespoons Ice Water
  • 2 cups Fresh Blackberries (or raspberries/blueberries)
  • 1/2 cup Granulated Sugar (adjust as necessary)
  • 1 tablespoon Lemon Juice
  • 2 tablespoons Cornstarch
  • 1/2 cup Light Brown Sugar (or granulated sugar)
  • 1 teaspoon Baking Powder
  • 1 cup Pistachios (shelled and unsalted)
  • 1/2 cup Unsalted Butter (cold and cubed)
  • 1 large Egg
  • 1 teaspoon Vanilla Extract

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine 1 cup of flour, 1/4 cup sugar, and 1/4 teaspoon salt. Add 1/2 cup cold butter and mix until coarse crumbs form.
  3. Stir in 1 egg yolk and add ice water, mixing until the dough comes together.
  4. Press the dough into a greased 9×9 baking pan. Bake for 15-18 minutes or until golden, then cool.
  5. In a bowl, mix blackberries, 1/2 cup sugar, lemon juice, and cornstarch until blackberries are coated.
  6. In a food processor, blend pistachios until finely chopped. In another bowl, mix them with 1/2 cup cold butter, 1/2 cup brown sugar, 1 large egg, baking powder, and vanilla extract.
  7. Spread berry filling over the cooled crust, then pour the pistachio filling over it.
  8. Bake for an additional 25-30 minutes until set and golden.
  9. Cool completely in the pan, then slice and serve.

Notes

These bars can be made ahead of time and stored in an airtight container. They also freeze well for long-term storage.
