- 4 chicken breasts
- 1 cup breadcrumbs
- 1/2 cup grated Parmesan cheese
- 1 tsp garlic powder
- 1/2 tsp paprika
- Salt and pepper to taste
- 2 eggs
- 2 tbsp olive oil
- 3 tbsp butter
- 4 cloves garlic, minced
- 2 tbsp flour
- 2 cups milk or half-and-half
- Fresh parsley for garnish
Instructions
- Pound the chicken breasts between two pieces of parchment paper until even in thickness, then season with salt, pepper, garlic powder, and paprika.
- In one shallow dish, beat the eggs. In another, combine breadcrumbs and grated Parmesan. Dip each chicken breast first into the egg, then dredge in the breadcrumb mixture.
- Heat olive oil in a heavy-bottomed skillet over medium heat. Cook the coated chicken for about 4-5 minutes on each side until golden-brown.
- In the same skillet, melt butter and sauté minced garlic until fragrant. Sprinkle in flour and stir for about a minute, then gradually whisk in milk until smooth. Cook until sauce thickens.
- Stir in grated Parmesan cheese, seasoning with salt and pepper.
- Serve the crispy chicken drizzled with the garlic sauce and garnish with fresh parsley.
Notes
Make the garlic sauce ahead of time and refrigerate it for up to three days. Reheat gently before serving.
