- 2 cups all-purpose flour
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1 cup brown sugar, packed
- 1/2 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup buttermilk
- 2 cups ripe peaches, sliced
- 1 tablespoon lemon juice
Instructions
- Preheat the oven to 350°F (175°C) and grease and flour a 9×13 inch baking pan.
- In a bowl, whisk together the flour, baking powder, baking soda, and salt.
- In a separate bowl, cream the butter, brown sugar, and granulated sugar until light and fluffy.
- Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
- Alternate adding the dry ingredients and buttermilk, starting and ending with the dry ingredients.
- Gently fold in the sliced peaches and lemon juice.
- Pour the batter into the prepared pan and smooth the top.
- Bake for 30-35 minutes or until a toothpick inserted comes out clean.
- Allow to cool before serving.
Notes
Serve warm with vanilla ice cream or whipped cream and consider experimenting with different fruits.
