- 1 cup unsalted butter, softened
- 2 cups granulated sugar
- 4 large eggs
- 1 teaspoon vanilla extract
- 3 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda

- 1 cup buttermilk
- 1 cup chopped pecans
- 8 oz cream cheese, softened
- 4 cups powdered sugar
- 2 tablespoons milk
Instructions
- Preheat your oven to 350°F (175°C). Prepare your loaf pan by greasing it with butter and dusting it with flour.
- Cream together the butter and sugar in a large mixing bowl until light and fluffy, about 3-5 minutes.
- Add eggs one at a time, beating well after each addition, then stir in the vanilla extract.
- In another bowl, whisk together the flour, baking powder, baking soda, and salt.
- Gradually add the dry ingredients to the creamed mixture, alternating with the buttermilk. Mix just until combined.
- Fold in the chopped pecans gently.
- Pour the batter into the prepared loaf pan, smoothing the top.
- Bake for 60-70 minutes, or until a toothpick inserted in the center comes out clean.
- While the cake cools, prepare the cream cheese icing by beating together the softened cream cheese, powdered sugar, and milk until smooth.
- Once cooled for at least 20 minutes, spread the cream cheese icing over the top.
- Slice, serve, and enjoy!
