Description

A delightful cake loaf made with buttery flavors and crunchy pecans, topped with luscious cream cheese icing.


Ingredients

  • 1 cup unsalted butter, softened
  • 2 cups granulated sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup buttermilk
  • 1 cup chopped pecans
  • 8 oz cream cheese, softened
  • 4 cups powdered sugar
  • 2 tablespoons milk

Instructions

  1. Preheat your oven to 350°F (175°C). Prepare your loaf pan by greasing it with butter and dusting it with flour.
  2. Cream together the butter and sugar in a large mixing bowl until light and fluffy, about 3-5 minutes.
  3. Add eggs one at a time, beating well after each addition, then stir in the vanilla extract.
  4. In another bowl, whisk together the flour, baking powder, baking soda, and salt.
  5. Gradually add the dry ingredients to the creamed mixture, alternating with the buttermilk. Mix just until combined.
  6. Fold in the chopped pecans gently.
  7. Pour the batter into the prepared loaf pan, smoothing the top.
  8. Bake for 60-70 minutes, or until a toothpick inserted in the center comes out clean.
  9. While the cake cools, prepare the cream cheese icing by beating together the softened cream cheese, powdered sugar, and milk until smooth.
  10. Once cooled for at least 20 minutes, spread the cream cheese icing over the top.
  11. Slice, serve, and enjoy!
