Description

Indulge in Cheesy Beef Nachos Supreme, a layered platter of crunchy tortilla chips topped with savory beef, melted cheese, and fresh toppings, perfect for any gathering.


Ingredients

  • 1 lb ground beef (80/20 recommended)
  • 1 small onion, finely diced
  • 2 cloves garlic, minced
  • 1 tsp chili powder
  • 1/2 tsp ground cumin
  • 1/2 tsp smoked paprika (optional)
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 14 oz sturdy tortilla chips
  • 1 cup canned black beans, drained and rinsed (or pinto beans)
  • 2 cups shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1/2 cup pickled jalapeño slices (optional)
  • 1/2 cup sour cream (for topping)
  • 1/2 cup salsa or pico de gallo (for topping)
  • 1/4 cup chopped fresh cilantro (for topping)
  • 1 medium avocado, diced or sliced (for topping)
  • 2 green onions, thinly sliced (for topping)
  • Lime wedges (for serving)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Line a large baking sheet with parchment paper or foil.
  3. Heat a large skillet over medium-high heat and add the ground beef, cooking for about 3-4 minutes.
  4. Add the diced onion and cook for another 2 minutes until softened.
  5. Stir in garlic, chili powder, cumin, smoked paprika, salt, and pepper, cooking for an additional 2 minutes.
  6. Spread tortilla chips evenly over the prepared baking sheet.
  7. Spoon the beef mixture evenly over the chips.
  8. Scatter black beans across the tray.
  9. Sprinkle cheddar and Monterey Jack cheese on top. Add jalapeños if desired.
  10. Bake for 8-10 minutes or until cheese is melted and bubbly.
  11. Remove and let cool for 2-3 minutes.
  12. Top with sour cream, salsa, avocado, cilantro, green onions, and lime.
  13. Serve immediately.

Notes

You can prepare the beef mixture a day in advance. Store it in the refrigerator and reheat before serving. Feel free to customize toppings based on preferences.
