- 4 boneless, skinless chicken breasts
- 1 cup mushrooms, chopped
- 4 tablespoons butter
- 3 cloves garlic, minced
- 1 cup cream cheese, softened
- 1 cup shredded mozzarella cheese
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- In a skillet, melt 2 tablespoons of butter over medium heat. Add the chopped mushrooms and garlic, sauté until mushrooms are tender.
- In a bowl, mix the sautéed mushrooms, cream cheese, mozzarella cheese, Italian seasoning, salt, and pepper until well combined.
- Cut a pocket in each chicken breast and stuff with the mushroom mixture.
- In the same skillet, melt the remaining butter and sear the stuffed chicken breasts on both sides until golden brown.
- Transfer the chicken to a baking dish and bake for 25-30 minutes or until the chicken is cooked through.
- Optional: Broil for an additional 2-3 minutes to brown the cheese on top.
Notes
- For extra flavor, add herbs like parsley or thyme to the stuffing.
- Serve with a side of vegetables or a salad for a complete meal.
