Description

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup mushrooms, chopped
  • 4 tablespoons butter
  • 3 cloves garlic, minced
  • 1 cup cream cheese, softened
  • 1 cup shredded mozzarella cheese
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a skillet, melt 2 tablespoons of butter over medium heat. Add the chopped mushrooms and garlic, sauté until mushrooms are tender.
  3. In a bowl, mix the sautéed mushrooms, cream cheese, mozzarella cheese, Italian seasoning, salt, and pepper until well combined.
  4. Cut a pocket in each chicken breast and stuff with the mushroom mixture.
  5. In the same skillet, melt the remaining butter and sear the stuffed chicken breasts on both sides until golden brown.
  6. Transfer the chicken to a baking dish and bake for 25-30 minutes or until the chicken is cooked through.
  7. Optional: Broil for an additional 2-3 minutes to brown the cheese on top.
