Description

Delicious quesadillas filled with shredded chicken, melting cheese, and a sweet and spicy kick of hot honey, served with a creamy jalapeño dipping sauce.


Ingredients

  • 4 large flour tortillas
  • 2 cups cooked chicken, shredded
  • 1 cup shredded cheese (cheddar or pepper jack)
  • 1/4 cup hot honey
  • 1/2 cup jalapeños, diced
  • 1 cup sour cream
  • 1 tablespoon lime juice
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions

  1. In a mixing bowl, combine shredded chicken, hot honey, and season with salt and pepper.
  2. Heat a skillet over medium heat and drizzle with olive oil.
  3. Place one tortilla in the skillet and sprinkle half of the cheese on one half of the tortilla.
  4. Spoon a generous portion of the chicken mixture on top of the cheese, then fold the tortilla over.
  5. Cook for 3-4 minutes on each side until golden brown and the cheese is melted.
  6. In a separate bowl, mix sour cream, diced jalapeños, and lime juice for the dipping sauce.
  7. Cut the quesadillas into wedges and serve hot with the jalapeño cream sauce on the side.

Notes

For a vegetarian version, substitute chicken with sautéed vegetables or beans.
