Description
Delicious quesadillas filled with shredded chicken, melting cheese, and a sweet and spicy kick of hot honey, served with a creamy jalapeño dipping sauce.

- 4 large flour tortillas
- 2 cups cooked chicken, shredded
- 1 cup shredded cheese (cheddar or pepper jack)
- 1/4 cup hot honey
- 1/2 cup jalapeños, diced
- 1 cup sour cream
- 1 tablespoon lime juice
- Salt and pepper to taste
- Olive oil for cooking
Instructions
- In a mixing bowl, combine shredded chicken, hot honey, and season with salt and pepper.
- Heat a skillet over medium heat and drizzle with olive oil.
- Place one tortilla in the skillet and sprinkle half of the cheese on one half of the tortilla.
- Spoon a generous portion of the chicken mixture on top of the cheese, then fold the tortilla over.
- Cook for 3-4 minutes on each side until golden brown and the cheese is melted.
- In a separate bowl, mix sour cream, diced jalapeños, and lime juice for the dipping sauce.
- Cut the quesadillas into wedges and serve hot with the jalapeño cream sauce on the side.
Notes
For a vegetarian version, substitute chicken with sautéed vegetables or beans.
