Description
A delicious sandwich featuring juicy chicken breast, sautéed bell peppers and onions, all covered in melted provolone cheese, served in a toasted hoagie roll.

- 2 boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 1 bell pepper, sliced
- 1 onion, sliced
- 4 slices of provolone cheese
- Salt and pepper to taste
- Hoagie rolls
Instructions
- Heat the olive oil in a large skillet over medium heat.
- Season the chicken breasts with salt and pepper and cook for 5-7 minutes on each side until golden brown and fully cooked.
- Remove the chicken and let it rest, then add the sliced bell pepper and onion to the same skillet and sauté until softened, about 4-5 minutes.
- Slice the chicken and return it to the skillet, mixing with the veggies.
- Lay the provolone cheese slices on top, cover the skillet, and let it melt for a couple of minutes.
- Assemble the cheesy chicken mixture into hoagie rolls.
Notes
Great for meal prep; can be made a day in advance and reheated. Customize with different veggies or cheeses as desired.
