Description

A delicious sandwich featuring juicy chicken breast, sautéed bell peppers and onions, all covered in melted provolone cheese, served in a toasted hoagie roll.


Ingredients

Scale
  • 2 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 bell pepper, sliced
  • 1 onion, sliced
  • 4 slices of provolone cheese
  • Salt and pepper to taste
  • Hoagie rolls

Instructions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Season the chicken breasts with salt and pepper and cook for 5-7 minutes on each side until golden brown and fully cooked.
  3. Remove the chicken and let it rest, then add the sliced bell pepper and onion to the same skillet and sauté until softened, about 4-5 minutes.
  4. Slice the chicken and return it to the skillet, mixing with the veggies.
  5. Lay the provolone cheese slices on top, cover the skillet, and let it melt for a couple of minutes.
  6. Assemble the cheesy chicken mixture into hoagie rolls.

Notes

Great for meal prep; can be made a day in advance and reheated. Customize with different veggies or cheeses as desired.
