Description

A vibrant Chicken Street Corn Salad featuring grilled chicken, sweet corn, and a creamy lime dressing, perfect for summer gatherings.


Ingredients

  • 2 cups grilled chicken, diced
  • 2 cups sweet corn (fresh or canned)
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 1 lime (juiced)
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup chopped cilantro
  • Salt and pepper to taste
  • Optional: diced red onion, jalapeños

Instructions

  1. In a large bowl, combine the diced grilled chicken and sweet corn.
  2. In a separate bowl, mix the mayonnaise, sour cream, lime juice, and a sprinkle of salt and pepper.
  3. Pour the dressing over the chicken and corn mixture, stirring gently to coat.
  4. Fold in the crumbled feta cheese and chopped cilantro.
  5. If desired, add diced red onion and jalapeños.
