- 2 cups sweet corn (fresh or canned)
- 1/2 cup mayonnaise
- 1/4 cup sour cream
- 1 lime (juiced)
- 1/2 cup feta cheese, crumbled
- 1/4 cup chopped cilantro
- Salt and pepper to taste
- Optional: diced red onion, jalapeños
Instructions
- In a large bowl, combine the diced grilled chicken and sweet corn.
- In a separate bowl, mix the mayonnaise, sour cream, lime juice, and a sprinkle of salt and pepper.
- Pour the dressing over the chicken and corn mixture, stirring gently to coat.
- Fold in the crumbled feta cheese and chopped cilantro.
- If desired, add diced red onion and jalapeños.
