- 2 medium sweet potatoes

Instructions
- Preheat the oven to 400°F (200°C).
- Peel and cube the sweet potatoes. Toss with olive oil, salt, pepper, and seasonings. Roast on a baking sheet for 25-30 minutes until tender.
- While roasting, bring a pot of water to a boil, stir in the rice, cover, and cook per package instructions (about 15-20 minutes).
- Heat a skillet over medium heat, add the chicken, season, and cook for 6-7 minutes on each side until golden brown.
- Add vegetables to the skillet in the last few minutes, cooking until tender.
