Description

A comforting bowl filled with roasted sweet potatoes, seasoned chicken, fluffy rice, and fresh vegetables, creating a deliciously balanced meal.


Ingredients

  • 1 lb chicken breast
  • 2 medium sweet potatoes
  • 1 cup rice
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Your choice of seasonings (e.g., paprika, garlic powder, herbs)
  • 1 cup vegetables (e.g., broccoli, bell peppers)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Peel and cube the sweet potatoes. Toss with olive oil, salt, pepper, and seasonings. Roast on a baking sheet for 25-30 minutes until tender.
  3. While roasting, bring a pot of water to a boil, stir in the rice, cover, and cook per package instructions (about 15-20 minutes).
  4. Heat a skillet over medium heat, add the chicken, season, and cook for 6-7 minutes on each side until golden brown.
  5. Add vegetables to the skillet in the last few minutes, cooking until tender.
