Description
Succulent chicken thighs marinated in chipotle honey and served with creamy smoked Gouda mashed potatoes.

- 4 chicken thighs, bone-in, skin-on
- 2 tablespoons chipotle sauce
- 2 tablespoons honey
- Salt and pepper to taste
- 2 pounds potatoes (Russets or Yukon Gold)
- 1/2 cup smoked Gouda cheese, shredded
- 1/4 cup milk
- 2 tablespoons butter
Instructions
- Preheat your oven to 375°F (190°C).
- In a medium mixing bowl, whisk together the chipotle sauce and honey until combined.
- Coat the chicken thighs in the marinade, season with salt and pepper, and let marinate for at least 30 minutes.
- Place marinated chicken in a baking dish and roast for 25–30 minutes until golden brown.
- While the chicken bakes, peel and chop the potatoes and boil in salted water until fork-tender, about 15–20 minutes.
- Drain the potatoes, return them to the pot, add butter, milk, and shredded Gouda, then mash until creamy and smooth.
- Serve the chicken thighs alongside the smoked Gouda mashed potatoes.
Notes
Marinate the chicken overnight for enhanced flavor. You can also boil and mash the potatoes in advance.
