Description

Succulent chicken thighs marinated in chipotle honey and served with creamy smoked Gouda mashed potatoes.


Ingredients

  • 4 chicken thighs, bone-in, skin-on
  • 2 tablespoons chipotle sauce
  • 2 tablespoons honey
  • Salt and pepper to taste
  • 2 pounds potatoes (Russets or Yukon Gold)
  • 1/2 cup smoked Gouda cheese, shredded
  • 1/4 cup milk
  • 2 tablespoons butter

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a medium mixing bowl, whisk together the chipotle sauce and honey until combined.
  3. Coat the chicken thighs in the marinade, season with salt and pepper, and let marinate for at least 30 minutes.
  4. Place marinated chicken in a baking dish and roast for 25–30 minutes until golden brown.
  5. While the chicken bakes, peel and chop the potatoes and boil in salted water until fork-tender, about 15–20 minutes.
  6. Drain the potatoes, return them to the pot, add butter, milk, and shredded Gouda, then mash until creamy and smooth.
  7. Serve the chicken thighs alongside the smoked Gouda mashed potatoes.

Notes

Marinate the chicken overnight for enhanced flavor. You can also boil and mash the potatoes in advance.
