Description

A delicious and healthy pasta salad packed with protein and creamy ranch flavor.


Ingredients

  • 8 oz whole wheat pasta
  • 1 cup cooked chicken breast, diced
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 cup Greek yogurt
  • 1/4 cup ranch dressing
  • 1/4 cup shredded cheese
  • 1/4 cup green onions, chopped
  • Salt and pepper to taste

Instructions

  1. Cook the whole wheat pasta according to package instructions. Drain and let cool.
  2. In a large bowl, combine the cooked pasta, diced chicken, cherry tomatoes, cucumber, and green onions.
  3. In a separate bowl, mix together the Greek yogurt and ranch dressing until smooth.
  4. Pour the dressing over the pasta salad and toss to combine.
  5. Add shredded cheese, salt, and pepper to taste, and mix well.
  6. Chill in the refrigerator for at least 30 minutes before serving.
