- 15 grams unsalted butter
- 8 grams all-purpose flour
- 150 milliliters whole milk
- 0.5 gram dry mustard
- 0.5 gram ground ginger
- 35 grams Gruyère cheese, shredded
- 15 grams Parmesan cheese, finely grated
- Salt and freshly cracked black pepper, to taste
- 3 slices sourdough bread, lightly buttered and toasted
- 45 grams whole grain prepared mustard
- 170 grams smoked ham, thinly sliced
- 3 large egg yolks
Instructions
- Melt the butter in a small saucepan over medium heat until it begins to foam.
- Whisk in the all-purpose flour for 2 to 3 minutes until cooked.
- Gradually add the whole milk while whisking to avoid lumps, cooking until thickened, about 5 minutes.
- Stir in the dry mustard, ground ginger, Gruyère, and Parmesan until melted and smooth; season with salt and pepper.
- Preheat the broiler.
- Spread whole grain mustard on one side of each toasted sourdough slice; layer with smoked ham.
- Ladle mornay sauce over each slice and create a well for the egg yolks.
- Slip an egg yolk into each well and broil for 3 to 4 minutes until bubbly.
- Season with salt and pepper before serving.
Notes
Make the mornay sauce ahead of time and store in an airtight container. Reheat gently before serving. Customize with other toppings like sautéed spinach or caramelized onions.
