- 8–10 garlic cloves, peeled and thinly sliced
- 3 tablespoons unsalted butter, melted
- 2 tablespoons olive oil
- 1 teaspoon salt

- 1 teaspoon smoked paprika (optional)
- Fresh thyme or rosemary sprigs (optional)
- Juice of half a lemon
Instructions
- Preheat your oven to 425°F (220°C).
- Peel and thinly slice 8-10 cloves of garlic.
- In a bowl, combine melted butter, olive oil, salt, pepper, and smoked paprika if using.
- Pat chicken thighs dry with paper towels.
- Add chicken and sliced garlic to the bowl with the butter mixture. Toss well.
- Place a wire rack over a rimmed baking sheet and arrange chicken skin-side up, spreading garlic evenly around the chicken.
- Nestle fresh herbs between thighs, if desired.
- Roast in the oven for 35-40 minutes, flipping garlic halfway through if necessary.
- Check doneness with a meat thermometer (165°F/74°C).
- Squeeze fresh lemon juice over the chicken before serving.
- Let the chicken rest for 5 minutes before serving.
Notes
Marinate chicken thighs in the butter mixture overnight for deeper flavor. Avoid overcrowding the pan to ensure even cooking.
