Description

Ingredients

  • 46 bone-in, skin-on chicken thighs
  • 810 garlic cloves, peeled and thinly sliced
  • 3 tablespoons unsalted butter, melted
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • ½ teaspoon freshly ground black pepper
  • 1 teaspoon smoked paprika (optional)
  • Fresh thyme or rosemary sprigs (optional)
  • Juice of half a lemon

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Peel and thinly slice 8-10 cloves of garlic.
  3. In a bowl, combine melted butter, olive oil, salt, pepper, and smoked paprika if using.
  4. Pat chicken thighs dry with paper towels.
  5. Add chicken and sliced garlic to the bowl with the butter mixture. Toss well.
  6. Place a wire rack over a rimmed baking sheet and arrange chicken skin-side up, spreading garlic evenly around the chicken.
  7. Nestle fresh herbs between thighs, if desired.
  8. Roast in the oven for 35-40 minutes, flipping garlic halfway through if necessary.
  9. Check doneness with a meat thermometer (165°F/74°C).
  10. Squeeze fresh lemon juice over the chicken before serving.
  11. Let the chicken rest for 5 minutes before serving.

Notes

Marinate chicken thighs in the butter mixture overnight for deeper flavor. Avoid overcrowding the pan to ensure even cooking.
