A hearty casserole combining seasoned beef, creamy refried beans, zesty tomatoes, and layers of cheese, topped with crispy Fritos for a delightful crunch.

- 1 pound (450g) ground beef
- 4 cups (about 240g) Fritos corn chips
- 1 can (16 oz/454g) refried beans
- 1 can (10 oz/283g) diced tomatoes with green chilies
- 1 packet (or 2 tablespoons) taco seasoning
- 2/3 cup (160 ml) water
- 2 cups (200g) shredded cheddar cheese
- 1 cup (100g) shredded Monterey Jack cheese
- 2–3 green onions, thinly sliced
- 1 small jalapeño (optional)
- Sour cream, for serving
- A handful of cilantro, chopped, for garnish
- Olive oil or cooking spray, to grease baking dish
Instructions
- Preheat your oven to 375°F (190°C).
- Heat a large skillet over medium-high heat. Add the ground beef and cook for 6-8 minutes, breaking apart until browned. Drain excess fat.
- Sprinkle taco seasoning over the beef, add water, stir, and let simmer for 3-4 minutes.
- In a medium bowl, mix refried beans and drained diced tomatoes until smooth but slightly chunky.
- Grease a 9×13-inch casserole dish with olive oil.
- Layer half of the Fritos in the dish, top with the bean mixture, seasoned beef, green onions, jalapeño (if using), and half of the cheeses.
- Repeat the layers with remaining Fritos and cheeses.
- Bake uncovered for 15-20 minutes until cheese is melty and bubbly.
- Let rest for 5 minutes before serving. Serve with sour cream and garnish with cilantro.
