Description

A vibrant and refreshing chicken salad bowl with aromatic flavors of the Mediterranean, topped with creamy tzatziki.


Ingredients

  • 2 medium boneless, skinless chicken breasts (about 1 lb / 450g)
  • 1 cup Greek yogurt (240g), full-fat or 2%
  • 1 medium cucumber, seeded and grated
  • 2 garlic cloves, minced
  • 2 tablespoons fresh dill, chopped
  • 2 tablespoons lemon juice
  • 2 tablespoons olive oil, extra virgin
  • 4 cups mixed greens (baby spinach, arugula, romaine) (120g)
  • 1 cup cherry tomatoes, halved (150g)
  • ¼ medium red onion, thinly sliced
  • ½ cup Kalamata olives, pitted and sliced (75g)
  • Salt and pepper to taste
  • Optional toppings: feta cheese crumbles, toasted pine nuts, cooked quinoa

Instructions

  1. Prep the Chicken Marinade: In a bowl, whisk together 1 tablespoon of olive oil, 1 tablespoon of lemon juice, 1 minced garlic clove, and a generous pinch of salt and pepper. Toss the chicken breasts in the marinade for at least 10 minutes.
  2. Make the Tzatziki Sauce: Grate the cucumber and squeeze out excess moisture. In a separate bowl, combine grated cucumber, Greek yogurt, minced garlic, dill, 1 tablespoon lemon juice, 1 tablespoon olive oil, and season with salt and pepper. Mix well and refrigerate.
  3. Cook the Chicken: Heat a grill pan over medium-high heat with a dash of olive oil. Cook the marinated chicken breasts for 5-6 minutes on each side until the internal temperature reaches 165°F (74°C). Rest for 5 minutes before slicing.
  4. Assemble the Salad: In a large bowl, toss mixed greens, cherry tomatoes, red onion, and Kalamata olives. Drizzle with olive oil and season with salt and pepper. Mix well.
  5. Build the Bowl: Divide the salad mixture into serving bowls, top with sliced chicken, and dollop tzatziki sauce. Add optional toppings like feta or pine nuts.

Notes

Make tzatziki a day in advance for deeper flavor. Use air fryer or oven for chicken cooking alternatives.
