Description

Garlic Herb Chicken with Creamy Mash & Roasted Carrots is a delicious and comforting dish that combines tender chicken infused with garlic and herbs, creamy mashed potatoes, and perfectly roasted carrots.


Ingredients

  • 4 chicken breasts
  • 4 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • 2 pounds potatoes, peeled and cubed
  • 1/2 cup heavy cream
  • 4 tablespoons butter
  • 1 pound carrots, peeled and cut into sticks
  • 1 tablespoon honey

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, mix olive oil, minced garlic, thyme, rosemary, salt, and pepper. Coat the chicken breasts with this mixture.
  3. Place the chicken on a baking sheet and roast in the oven for 25-30 minutes or until cooked through.
  4. Meanwhile, boil the potatoes in salted water until tender, about 15-20 minutes.
  5. Drain the potatoes and mash them with heavy cream and butter until creamy. Season with salt and pepper.
  6. On another baking sheet, toss the carrots with honey, salt, and pepper, and roast in the oven for 20 minutes.
  7. Serve the garlic herb chicken with creamy mash and roasted carrots on the side.

Notes

  • For extra flavor, marinate the chicken for a few hours before cooking.
  • Feel free to add other vegetables to roast alongside the carrots.
  • Adjust the consistency of the mashed potatoes by adding more or less cream.
