- 4 chicken breasts
- 4 cloves garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
- 2 pounds potatoes, peeled and cubed
- 1/2 cup heavy cream
- 4 tablespoons butter
- 1 pound carrots, peeled and cut into sticks
- 1 tablespoon honey
Instructions
- Preheat the oven to 400°F (200°C).
- In a bowl, mix olive oil, minced garlic, thyme, rosemary, salt, and pepper. Coat the chicken breasts with this mixture.
- Place the chicken on a baking sheet and roast in the oven for 25-30 minutes or until cooked through.
- Meanwhile, boil the potatoes in salted water until tender, about 15-20 minutes.
- Drain the potatoes and mash them with heavy cream and butter until creamy. Season with salt and pepper.
- On another baking sheet, toss the carrots with honey, salt, and pepper, and roast in the oven for 20 minutes.
- Serve the garlic herb chicken with creamy mash and roasted carrots on the side.
Notes
- For extra flavor, marinate the chicken for a few hours before cooking.
- Feel free to add other vegetables to roast alongside the carrots.
- Adjust the consistency of the mashed potatoes by adding more or less cream.
