- 2 pounds baby potatoes
- 4 cloves garlic, minced

- 1 cup ricotta cheese
Instructions
- Preheat the oven to 400°F (200°C).
- Wash and halve the baby potatoes.
- In a large bowl, combine the potatoes, minced garlic, chopped rosemary, olive oil, salt, and pepper.
- Toss until the potatoes are well coated.
- Spread the potatoes in a single layer on a baking sheet.
- Roast in the preheated oven for 25-30 minutes, or until golden brown and tender.
- Remove from the oven and let cool slightly.
