Description

A delicious and savory dish featuring roasted potatoes infused with garlic and rosemary, topped with creamy ricotta cheese.


Ingredients

  • 2 pounds baby potatoes
  • 4 cloves garlic, minced
  • 2 tablespoons fresh rosemary, chopped
  • 3 tablespoons olive oil
  • Salt and pepper to taste
  • 1 cup ricotta cheese

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash and halve the baby potatoes.
  3. In a large bowl, combine the potatoes, minced garlic, chopped rosemary, olive oil, salt, and pepper.
  4. Toss until the potatoes are well coated.
  5. Spread the potatoes in a single layer on a baking sheet.
  6. Roast in the preheated oven for 25-30 minutes, or until golden brown and tender.
  7. Remove from the oven and let cool slightly.
  8. Serve topped with dollops of ricotta cheese.
