- 1 cup crushed pineapple, drained
- 2 cups all-purpose flour
- 1 tablespoon baking powder

- 1/2 cup milk
- 1/4 cup vegetable oil
- 2 large eggs
Instructions
- Preheat the oven to 375°F (190°C) and line a muffin tin with paper liners.
- In a large bowl, combine the flour, baking powder, salt, and pepper.
- In another bowl, whisk together the milk, vegetable oil, and eggs.
- Add the wet ingredients to the dry ingredients and mix until just combined.
- Fold in the diced ham, shredded cheese, and crushed pineapple.
- Divide the batter evenly among the muffin cups.
- Bake for 20-25 minutes or until a toothpick inserted into the center comes out clean.
- Let the muffins cool in the pan for 5 minutes before transferring to a wire rack to cool completely.
Notes
- For a spicier kick, add some chopped jalapeños.
