Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, mix together the rolled oats, baking powder, cinnamon, and salt.
- In another bowl, whisk together the applesauce, grated apples, honey (or maple syrup), melted coconut oil, eggs, and vanilla extract.
- Combine the wet ingredients with the dry ingredients and mix until well combined.
- Pour the batter into a greased 9-inch round cake pan.
- Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
- Let it cool before slicing and serving.
