Description

A refreshing and healthy salad featuring herb-crusted salmon, perfect for a light meal or a special occasion.


Ingredients

  • 2 salmon fillets
  • 1 cup mixed greens
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup cucumber, sliced
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 1 teaspoon dried herbs (such as dill, parsley, and thyme)
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a small bowl, mix olive oil, lemon juice, dried herbs, salt, and pepper.
  3. Brush the herb mixture over the salmon fillets.
  4. Place the salmon on a baking sheet and bake for 12-15 minutes or until cooked through.
  5. While the salmon is baking, prepare the salad by combining mixed greens, cherry tomatoes, and cucumber in a large bowl.
  6. Once the salmon is done, let it cool slightly, then flake it over the salad.
  7. Toss the salad gently and serve immediately.
