Ingredients

- 2 salmon fillets
- 1 cup mixed greens
- 1/2 cup cherry tomatoes, halved
- 1/4 cup cucumber, sliced
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- 1 teaspoon dried herbs (such as dill, parsley, and thyme)
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- In a small bowl, mix olive oil, lemon juice, dried herbs, salt, and pepper.
- Brush the herb mixture over the salmon fillets.
- Place the salmon on a baking sheet and bake for 12-15 minutes or until cooked through.
- While the salmon is baking, prepare the salad by combining mixed greens, cherry tomatoes, and cucumber in a large bowl.
- Once the salmon is done, let it cool slightly, then flake it over the salad.
- Toss the salad gently and serve immediately.
Notes
- For added flavor, marinate the salmon for 30 minutes before baking.
- This salad can be served warm or cold.
