Description

A delightful pastry filled with a sweet blueberry and lemon mixture, perfect for breakfast or dessert.


Ingredients

  • 1 package of puff pastry (thawed)
  • 1 cup fresh blueberries
  • 1/4 cup granulated sugar
  • 1 tablespoon lemon juice
  • 1 teaspoon lemon zest
  • 1 egg (beaten, for egg wash)
  • Powdered sugar (for dusting)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, combine blueberries, granulated sugar, lemon juice, and lemon zest.
  3. Roll out the puff pastry on a floured surface and cut into squares.
  4. Place a spoonful of the blueberry mixture in the center of each square.
  5. Fold the corners of the pastry over the filling and pinch to seal.
  6. Brush the tops with beaten egg.
  7. Bake for 15-20 minutes or until golden brown.
  8. Let cool slightly and dust with powdered sugar before serving.

Notes

  • For a richer flavor, add a teaspoon of vanilla extract to the blueberry mixture.
  • These can be made ahead of time and frozen before baking.
