- 1 package of puff pastry (thawed)
- 1 cup fresh blueberries
- 1/4 cup granulated sugar
- 1 tablespoon lemon juice
- 1 teaspoon lemon zest
- 1 egg (beaten, for egg wash)
- Powdered sugar (for dusting)
Instructions
- Preheat the oven to 400°F (200°C).
- In a bowl, combine blueberries, granulated sugar, lemon juice, and lemon zest.
- Roll out the puff pastry on a floured surface and cut into squares.
- Place a spoonful of the blueberry mixture in the center of each square.
- Fold the corners of the pastry over the filling and pinch to seal.
- Brush the tops with beaten egg.
- Bake for 15-20 minutes or until golden brown.
- Let cool slightly and dust with powdered sugar before serving.
Notes
- For a richer flavor, add a teaspoon of vanilla extract to the blueberry mixture.
- These can be made ahead of time and frozen before baking.
