- 100g unsalted butter, softened
- 100g sugar
- 1 egg
- 1 tsp vanilla extract
- 50g desiccated coconut
- 150g sweetened condensed milk
- Pinch of salt
Instructions
- Preheat the oven to 180°C (350°F).
- In a bowl, cream together the softened butter and sugar until light and fluffy.
- Add the egg and vanilla extract, mixing well.
- Gradually add the flour, salt, and desiccated coconut, stirring until a dough forms.
- Roll the dough into small balls and place them on a baking tray lined with parchment paper.
- Flatten each ball slightly with a fork.
- Bake in the preheated oven for 12-15 minutes or until golden brown.
- Let the biscuits cool completely.
- For the filling, mix the sweetened condensed milk with a little coconut until smooth.
- Spread the filling on one biscuit and sandwich it with another biscuit.
- Repeat until all biscuits are filled.
