Ingredients

  • 200g plain flour
  • 100g unsalted butter, softened
  • 100g sugar
  • 1 egg
  • 1 tsp vanilla extract
  • 50g desiccated coconut
  • 150g sweetened condensed milk
  • Pinch of salt

Instructions

  1. Preheat the oven to 180°C (350°F).
  2. In a bowl, cream together the softened butter and sugar until light and fluffy.
  3. Add the egg and vanilla extract, mixing well.
  4. Gradually add the flour, salt, and desiccated coconut, stirring until a dough forms.
  5. Roll the dough into small balls and place them on a baking tray lined with parchment paper.
  6. Flatten each ball slightly with a fork.
  7. Bake in the preheated oven for 12-15 minutes or until golden brown.
  8. Let the biscuits cool completely.
  9. For the filling, mix the sweetened condensed milk with a little coconut until smooth.
  10. Spread the filling on one biscuit and sandwich it with another biscuit.
  11. Repeat until all biscuits are filled.
