Description

Delicious Keto Bacon-Wrapped Zucchini Boats filled with creamy cheese and wrapped in crispy bacon, perfect for a low-carb treat.


Ingredients

  • 2 medium zucchinis
  • 4 ounces cream cheese
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 6 slices of bacon
  • Salt and pepper to taste
  • Optional: Garlic powder, onion powder, or herbs for seasoning

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Cut the zucchinis in half lengthwise and gently scoop out some of the center to create boats.
  3. In a bowl, mix together the cream cheese, shredded cheese, salt, pepper, and any optional seasonings until smooth.
  4. Fill each zucchini half with the cheese mixture.
  5. Wrap a slice of bacon around each stuffed zucchini half.
  6. Place the zucchini boats on a baking sheet.
  7. Bake for 20-25 minutes until the zucchini is tender and the bacon is crispy.

Notes
