Keto Coffee Cake Cookies are a delicious and guilt-free treat that combines the flavors of coffee cake with the convenience of cookies, perfect for those following a low-carb diet.


Ingredients

  • 1 cup almond flour
  • 1/4 cup coconut flour
  • 1/2 cup erythritol or preferred sweetener
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup chopped nuts (optional)
  • 1/2 teaspoon cinnamon

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine almond flour, coconut flour, erythritol, baking powder, salt, and cinnamon.
  3. In another bowl, cream together the softened butter and sweetener until light and fluffy.
  4. Add the eggs and vanilla extract to the butter mixture and mix well.
  5. Gradually add the dry ingredients to the wet ingredients and mix until combined.
  6. If using, fold in the chopped nuts.
  7. Drop spoonfuls of the dough onto the prepared baking sheet, spacing them about 2 inches apart.
  8. Bake for 12-15 minutes or until the edges are golden brown.
  9. Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
