Description

Deliciously stuffed potatoes filled with a spicy Cajun seafood mix, perfect for a hearty meal.


Ingredients

  • 4 large russet potatoes
  • 1 lb shrimp, peeled and deveined
  • 1 cup crab meat
  • 1/2 cup cream cheese
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup green onions, chopped
  • 2 tbsp Cajun seasoning
  • 2 tbsp butter
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash and pierce the potatoes with a fork, then bake for 45-60 minutes until tender.
  3. In a skillet, melt butter over medium heat and add shrimp, cooking until pink.
  4. Add crab meat, cream cheese, Cajun seasoning, and mix well.
  5. Once the potatoes are done, cut them in half and scoop out some of the flesh.
  6. Mix the scooped potato with the seafood mixture and fill the potato skins.
  7. Top with shredded cheddar cheese and green onions.
  8. Bake for an additional 10-15 minutes until the cheese is melted and bubbly.

Notes

  • Feel free to adjust the level of Cajun seasoning to your taste.
  • These can be made ahead of time and reheated before serving.
  • For a spicier kick, add diced jalapeños to the filling.
