Deliciously stuffed potatoes filled with a spicy Cajun seafood mix, perfect for a hearty meal.
Ingredients

- 4 large russet potatoes
- 1 lb shrimp, peeled and deveined
- 1 cup crab meat
- 1/2 cup cream cheese
- 1/2 cup shredded cheddar cheese
- 1/4 cup green onions, chopped
- 2 tbsp Cajun seasoning
- 2 tbsp butter
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- Wash and pierce the potatoes with a fork, then bake for 45-60 minutes until tender.
- In a skillet, melt butter over medium heat and add shrimp, cooking until pink.
- Add crab meat, cream cheese, Cajun seasoning, and mix well.
- Once the potatoes are done, cut them in half and scoop out some of the flesh.
- Mix the scooped potato with the seafood mixture and fill the potato skins.
- Top with shredded cheddar cheese and green onions.
- Bake for an additional 10-15 minutes until the cheese is melted and bubbly.
Notes
- Feel free to adjust the level of Cajun seasoning to your taste.
- These can be made ahead of time and reheated before serving.
- For a spicier kick, add diced jalapeños to the filling.
