Description

A vibrant and flavorful meal featuring crispy potatoes, seasoned ground beef, and fresh toppings that create a fiesta in every bite.


Ingredients

  • 4 medium Yukon Gold or red potatoes, diced
  • 1 lb ground beef (or ground turkey)
  • 2 tbsp taco seasoning
  • 1 cup cheddar cheese, shredded
  • 1/2 cup sour cream
  • 2 green onions, chopped
  • 12 jalapeños, sliced
  • 1/2 cup salsa
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Wash and dice the potatoes into bite-sized pieces. Toss them in a mixing bowl with olive oil, salt, and pepper.
  3. Spread the potatoes in a single layer on a baking sheet.
  4. Roast for 25-30 minutes, turning halfway through, until golden brown and crispy.
  5. While the potatoes roast, heat a skillet over medium heat and cook the ground beef until browned, adding taco seasoning to taste.
  6. Assemble the bowls with roasted potatoes at the base, topped with seasoned ground beef, cheddar cheese, sour cream, green onions, jalapeños, and salsa.
  7. Serve immediately and enjoy!

Notes

Customize the toppings to your taste by adding black beans or different cheeses. Avoid overcrowding the baking sheet for the crispiest potatoes.
