- 4 medium Yukon Gold or red potatoes, diced
- 1 lb ground beef (or ground turkey)
- 2 tbsp taco seasoning
- 1 cup cheddar cheese, shredded
- 1/2 cup sour cream
- 2 green onions, chopped
- 1–2 jalapeños, sliced
- 1/2 cup salsa
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Preheat your oven to 425°F (220°C).
- Wash and dice the potatoes into bite-sized pieces. Toss them in a mixing bowl with olive oil, salt, and pepper.
- Spread the potatoes in a single layer on a baking sheet.
- Roast for 25-30 minutes, turning halfway through, until golden brown and crispy.
- While the potatoes roast, heat a skillet over medium heat and cook the ground beef until browned, adding taco seasoning to taste.
- Assemble the bowls with roasted potatoes at the base, topped with seasoned ground beef, cheddar cheese, sour cream, green onions, jalapeños, and salsa.
- Serve immediately and enjoy!
Notes
Customize the toppings to your taste by adding black beans or different cheeses. Avoid overcrowding the baking sheet for the crispiest potatoes.
