Ingredients

Scale
  • 4 russet potatoes
  • 1 lb ground meat (beef, turkey, or chicken)
  • 2 tbsp taco seasoning

Instructions

  1. Boil the potatoes: Peel and cut potatoes into chunks, add to a large pot of salted water, and cook until fork-tender, about 15-20 minutes.
  2. Prepare the meat: Heat a skillet over medium-high heat, add ground meat and taco seasoning, and cook until browned, about 7-10 minutes.
  3. Mash the potatoes: Drain and mash the potatoes with butter, salt, and pepper.
  4. Assemble your bowls: Layer mashed potatoes in a bowl and top with cooked meat and cheddar cheese.
  5. Top and customize: Add lettuce, tomatoes, avocado, and drizzle with sour cream and salsa.
