- 4 chicken thighs
- 1/4 cup maple syrup
- 2 tablespoons olive oil
- 2 teaspoons dried thyme
- 2 teaspoons garlic powder
- Salt and pepper to taste
- 2 cups mixed vegetables (carrots, bell peppers, zucchini)
Instructions
- Preheat the oven to 400°F (200°C).
- In a bowl, mix maple syrup, olive oil, thyme, garlic powder, salt, and pepper.
- Coat the chicken thighs with the maple glaze.
- Place the chicken thighs on a baking sheet.
- In the same bowl, toss the mixed vegetables with a little olive oil, salt, and pepper.
- Add the vegetables to the baking sheet around the chicken.
- Bake for 25-30 minutes or until the chicken is cooked through and the vegetables are tender.
- Serve hot and enjoy!
Notes
- For extra flavor, marinate the chicken in the glaze for a few hours before cooking.
- Feel free to use any seasonal vegetables you have on hand.
- Adjust the sweetness of the glaze by adding more or less maple syrup.
