Description

A flavorful and hearty gumbo recipe perfect for celebrating Mardi Gras.


Ingredients

  • 1 lb Andouille sausage, sliced
  • 1 lb shrimp, peeled and deveined
  • 1 lb chicken thighs, diced
  • 1 cup okra, sliced
  • 1 large onion, chopped
  • 1 bell pepper, chopped
  • 2 celery stalks, chopped
  • 4 cloves garlic, minced
  • 6 cups chicken broth
  • 2 cups diced tomatoes
  • 1/4 cup vegetable oil
  • 1/4 cup all-purpose flour
  • 2 tablespoons Cajun seasoning
  • Salt and pepper to taste
  • Cooked rice for serving

Instructions

  1. In a large pot, heat the vegetable oil over medium heat.
  2. Add the flour and stir continuously to make a roux, cooking until it turns a dark brown color.
  3. Add the onion, bell pepper, celery, and garlic to the roux and sauté until softened.
  4. Stir in the chicken, sausage, and Cajun seasoning, cooking until the chicken is browned.
  5. Add the chicken broth, diced tomatoes, and okra, bringing the mixture to a boil.
  6. Reduce heat and let simmer for about 30 minutes.
  7. Add the shrimp and cook for an additional 5-7 minutes until shrimp are cooked through.
  8. Season with salt and pepper to taste.
  9. Serve hot over cooked rice.

Notes

  • For a spicier gumbo, add more Cajun seasoning or hot sauce.
  • Feel free to substitute other proteins like crab or fish.
  • Gumbo can be made a day in advance for better flavor.
