- 1 lb Andouille sausage, sliced
- 1 lb shrimp, peeled and deveined
- 1 lb chicken thighs, diced
- 1 cup okra, sliced
- 1 large onion, chopped
- 1 bell pepper, chopped
- 2 celery stalks, chopped
- 4 cloves garlic, minced
- 6 cups chicken broth
- 2 cups diced tomatoes
- 1/4 cup vegetable oil
- 1/4 cup all-purpose flour
- 2 tablespoons Cajun seasoning
- Salt and pepper to taste
- Cooked rice for serving
Instructions
- In a large pot, heat the vegetable oil over medium heat.
- Add the flour and stir continuously to make a roux, cooking until it turns a dark brown color.
- Add the onion, bell pepper, celery, and garlic to the roux and sauté until softened.
- Stir in the chicken, sausage, and Cajun seasoning, cooking until the chicken is browned.
- Add the chicken broth, diced tomatoes, and okra, bringing the mixture to a boil.
- Reduce heat and let simmer for about 30 minutes.
- Add the shrimp and cook for an additional 5-7 minutes until shrimp are cooked through.
- Season with salt and pepper to taste.
- Serve hot over cooked rice.
Notes
- For a spicier gumbo, add more Cajun seasoning or hot sauce.
- Feel free to substitute other proteins like crab or fish.
- Gumbo can be made a day in advance for better flavor.
