- 1 lb shrimp, peeled and deveined
- 1/2 cup vegetable oil
- 1/2 cup all-purpose flour
- 1 cup onion, chopped
- 1 cup green bell pepper, chopped
- 1 cup celery, chopped
- 4 cloves garlic, minced
- 4 cups seafood stock
- 1 can diced tomatoes (14.5 oz)
- 2 tablespoons Cajun seasoning
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 cup green onions, chopped
- 1/4 cup parsley, chopped
- Cooked rice, for serving
Instructions
- In a large pot, heat the vegetable oil over medium heat.
- Add the flour and stir continuously to make a roux, cooking until it turns a dark brown color.
- Add the chopped onion, bell pepper, celery, and garlic to the roux, cooking until the vegetables are soft.
- Stir in the seafood stock, diced tomatoes, Cajun seasoning, salt, and black pepper.
- Bring the mixture to a simmer and cook for about 20 minutes, stirring occasionally.
- Add the shrimp and cook until they are pink and cooked through, about 5 minutes.
- Stir in the green onions and parsley just before serving.
- Serve over cooked rice.
Notes
- For a spicier dish, add more Cajun seasoning or hot sauce.
- This dish can be made ahead of time and reheated.
- Serve with crusty bread for a complete meal.
