Description

A flavorful and hearty dish featuring shrimp cooked in a rich, spicy sauce, perfect for celebrating Mardi Gras.


Ingredients

  • 1 lb shrimp, peeled and deveined
  • 1/2 cup vegetable oil
  • 1/2 cup all-purpose flour
  • 1 cup onion, chopped
  • 1 cup green bell pepper, chopped
  • 1 cup celery, chopped
  • 4 cloves garlic, minced
  • 4 cups seafood stock
  • 1 can diced tomatoes (14.5 oz)
  • 2 tablespoons Cajun seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup green onions, chopped
  • 1/4 cup parsley, chopped
  • Cooked rice, for serving

Instructions

  1. In a large pot, heat the vegetable oil over medium heat.
  2. Add the flour and stir continuously to make a roux, cooking until it turns a dark brown color.
  3. Add the chopped onion, bell pepper, celery, and garlic to the roux, cooking until the vegetables are soft.
  4. Stir in the seafood stock, diced tomatoes, Cajun seasoning, salt, and black pepper.
  5. Bring the mixture to a simmer and cook for about 20 minutes, stirring occasionally.
  6. Add the shrimp and cook until they are pink and cooked through, about 5 minutes.
  7. Stir in the green onions and parsley just before serving.
  8. Serve over cooked rice.

Notes

  • For a spicier dish, add more Cajun seasoning or hot sauce.
  • This dish can be made ahead of time and reheated.
  • Serve with crusty bread for a complete meal.
