Description

A delicious Mediterranean Beef Bowl topped with a refreshing herbed yogurt sauce, perfect for a healthy meal.


Ingredients

  • 1 lb ground beef
  • 1 cup cooked quinoa
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 red onion, diced
  • 1/4 cup olives, sliced
  • 1/4 cup feta cheese, crumbled
  • 2 cups mixed greens
  • 1 cup plain Greek yogurt
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon fresh dill, chopped
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Instructions

  1. In a skillet, cook the ground beef over medium heat until browned. Season with salt and pepper.
  2. In a bowl, mix the Greek yogurt, parsley, dill, lemon juice, salt, and pepper to create the herbed yogurt sauce.
  3. In serving bowls, layer the cooked quinoa, mixed greens, cooked beef, cherry tomatoes, cucumber, red onion, olives, and feta cheese.
  4. Drizzle the herbed yogurt sauce over the top of each bowl.
