- 1 lb ground beef
- 1 cup cooked quinoa
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/2 red onion, diced
- 1/4 cup olives, sliced
- 1/4 cup feta cheese, crumbled
- 2 cups mixed greens
- 1 cup plain Greek yogurt
- 2 tablespoons fresh parsley, chopped
- 1 tablespoon fresh dill, chopped
- 1 tablespoon lemon juice
- Salt and pepper to taste
Instructions
- In a skillet, cook the ground beef over medium heat until browned. Season with salt and pepper.
- In a bowl, mix the Greek yogurt, parsley, dill, lemon juice, salt, and pepper to create the herbed yogurt sauce.
- In serving bowls, layer the cooked quinoa, mixed greens, cooked beef, cherry tomatoes, cucumber, red onion, olives, and feta cheese.
- Drizzle the herbed yogurt sauce over the top of each bowl.
