Description

Succulent corn on the cob grilled to perfection, topped with creamy mayo, tangy lime, and crumbled cotija cheese for a vibrant summer treat.

Ingredients

Scale
  • 4 ears of corn, husked
  • 1/4 cup mayonnaise
  • 1 tablespoon lime juice
  • 1/2 teaspoon chili powder
  • 1/2 cup cotija cheese, crumbled
  • 1/4 cup fresh cilantro, chopped
  • Salt and pepper to taste

Instructions

  1. Preheat the grill to medium-high heat.
  2. Place the husked corn directly on the grill and cook for 10-15 minutes, turning occasionally until charred.
  3. In a bowl, mix mayonnaise, lime juice, chili powder, salt, and pepper to create the sauce.
  4. Use a basting brush to coat the hot grilled corn with the mayo-lime sauce.
  5. Garnish with crumbled cotija cheese and chopped cilantro.
  6. Serve immediately for best flavor.

Notes

For a different flavor, consider using Greek yogurt instead of mayonnaise. Customize spice levels to your preference.
