Millionaire Shortbread is a delicious dessert that features a buttery shortbread base, a rich caramel layer, and a smooth chocolate topping.

- 1 cup unsalted butter
- 1/2 cup granulated sugar
- 2 cups all-purpose flour
- 1/4 teaspoon salt
- 1 can (14 oz) sweetened condensed milk
- 1 cup brown sugar
- 1/2 cup light corn syrup
- 1 teaspoon vanilla extract
- 2 cups semi-sweet chocolate chips
- 2 tablespoons unsalted butter (for chocolate layer)
Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, cream together the butter and granulated sugar until light and fluffy.
- Add the flour and salt, mixing until combined.
- Press the mixture into the bottom of a greased 9×9 inch baking pan.
- Bake for 20 minutes or until lightly golden.
- In a saucepan, combine sweetened condensed milk, brown sugar, corn syrup, and vanilla. Cook over medium heat, stirring constantly until it thickens.
- Pour the caramel over the baked shortbread and let it cool.
- Melt the chocolate chips and butter together, stirring until smooth.
- Spread the chocolate over the cooled caramel layer.
- Chill in the refrigerator until set, then cut into squares and serve.
Notes
- For a richer flavor, use dark chocolate instead of semi-sweet.
- Store in an airtight container for up to a week.
- Can be frozen for longer storage.
