- 1 cup macaroni pasta
- 1 can kidney beans, drained and rinsed
- 1 can black beans, drained and rinsed
- 1 can diced tomatoes
- 1 cup vegetable broth
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tablespoon chili powder
- 1 teaspoon cumin
- Salt and pepper to taste
- Olive oil for sautéing
Instructions
- Heat olive oil over medium heat in a large pot.
- Add the chopped onion and minced garlic, sauté until the onion is translucent (2-3 minutes).
- Stir in chili powder, cumin, salt, and pepper, sauté for another minute.
- Toss in the macaroni, kidney beans, black beans, diced tomatoes, and vegetable broth. Stir well.
- Bring to a gentle boil, then reduce to a simmer. Cook for 10-12 minutes until pasta is al dente, adding more broth if it looks dry.
- Serve hot, garnished with toppings of your choice.
