Ingredients

- 2 cups fresh peaches, peeled and diced
- 1/2 cup sugar
- 1 tablespoon lemon juice
- 1 teaspoon cinnamon
- 1 tablespoon cornstarch
- 1 package refrigerated pie crusts (2 crusts)
- 1 egg, beaten (for egg wash)
- 1 tablespoon milk (for egg wash)
Instructions
- Preheat the oven to 400°F (200°C).
- In a bowl, combine diced peaches, sugar, lemon juice, cinnamon, and cornstarch. Mix well.
- Roll out the pie crusts and cut them into circles.
- Place a spoonful of the peach mixture in the center of each circle.
- Fold the crust over to create a half-moon shape and seal the edges with a fork.
- Brush the tops with the egg wash made from beaten egg and milk.
- Bake for 20-25 minutes or until golden brown.
- Let cool before serving.
Notes
- For extra flavor, add a pinch of nutmeg to the peach filling.
- These hand pies can be served warm or at room temperature.
- Store leftovers in an airtight container for up to 3 days.
