Description

A delicious slow-braised beef roast glazed with a tangy cranberry balsamic sauce, perfect for a comforting meal.


Ingredients

  • 34 lbs beef roast
  • 1 cup cranberry juice
  • 1/2 cup balsamic vinegar
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 2 cups beef broth
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh rosemary for garnish

Instructions

  1. Preheat the oven to 325°F (163°C).
  2. Season the beef roast with salt and pepper.
  3. In a large oven-safe pot, heat olive oil over medium-high heat and sear the beef roast on all sides until browned.
  4. Remove the roast and set aside. In the same pot, add chopped onion and garlic, sautéing until softened.
  5. Pour in the cranberry juice and balsamic vinegar, scraping up any browned bits from the bottom of the pot.
  6. Add the beef broth and return the roast to the pot.
  7. Cover the pot and transfer it to the oven. Braise for 3-4 hours, or until the meat is tender.
  8. Once done, remove the roast and let it rest before slicing. Serve with the glaze from the pot.

Notes

  • For extra flavor, marinate the beef roast overnight.
  • Serve with mashed potatoes or roasted vegetables.
  • Leftovers can be stored in the refrigerator for up to 3 days.
