A delicious slow-braised beef roast glazed with a tangy cranberry balsamic sauce, perfect for a comforting meal.

- 3–4 lbs beef roast
- 1 cup cranberry juice
- 1/2 cup balsamic vinegar
- 1 onion, chopped
- 4 cloves garlic, minced
- 2 cups beef broth
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh rosemary for garnish
Instructions
- Preheat the oven to 325°F (163°C).
- Season the beef roast with salt and pepper.
- In a large oven-safe pot, heat olive oil over medium-high heat and sear the beef roast on all sides until browned.
- Remove the roast and set aside. In the same pot, add chopped onion and garlic, sautéing until softened.
- Pour in the cranberry juice and balsamic vinegar, scraping up any browned bits from the bottom of the pot.
- Add the beef broth and return the roast to the pot.
- Cover the pot and transfer it to the oven. Braise for 3-4 hours, or until the meat is tender.
- Once done, remove the roast and let it rest before slicing. Serve with the glaze from the pot.
Notes
- For extra flavor, marinate the beef roast overnight.
- Serve with mashed potatoes or roasted vegetables.
- Leftovers can be stored in the refrigerator for up to 3 days.
