- 1 pound carrots, peeled and cut into 1-inch pieces
- 1 pound Brussels sprouts, trimmed and halved
- 1/4 cup maple syrup
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon garlic powder
- 1/2 teaspoon thyme (optional)
Instructions
- In a slow cooker, combine the carrots and Brussels sprouts.
- In a small bowl, whisk together the maple syrup, olive oil, salt, pepper, garlic powder, and thyme.
- Pour the maple mixture over the vegetables and toss to coat.
- Cover and cook on low for 4-5 hours or until the vegetables are tender.
- Stir before serving and enjoy!
Notes
- For added flavor, you can sprinkle some chopped nuts on top before serving.
- This dish can be made ahead of time and reheated.
- Adjust the sweetness by adding more or less maple syrup according to your taste.
