Description

Ingredients

  • 34 lbs beef chuck roast
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 3 carrots, sliced
  • 3 potatoes, diced
  • 4 cloves garlic, minced
  • 2 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a skillet over medium-high heat.
  2. Season the beef chuck roast with salt and pepper, then sear it in the skillet until browned on all sides.
  3. Transfer the roast to the slow cooker.
  4. Add chopped onion, sliced carrots, diced potatoes, and minced garlic around the roast.
  5. In a bowl, mix beef broth, Worcestershire sauce, thyme, and rosemary, then pour over the roast and vegetables.
  6. Cover and cook on low for 8 hours or high for 4 hours, until the meat is tender.
  7. Once cooked, remove the roast and let it rest before slicing.
  8. Serve with the vegetables and broth from the slow cooker.

Notes

  • For extra flavor, add a splash of red wine to the broth mixture.
