Description

A nutritious and flavorful dish combining turmeric, cauliflower, chickpeas, and potatoes, perfect for a healthy meal.


Ingredients

  • 1 head of cauliflower, cut into florets
  • 1 can of chickpeas, drained and rinsed
  • 2 medium potatoes, diced
  • 2 tablespoons of turmeric powder
  • 1 tablespoon of olive oil
  • 1 teaspoon of cumin
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, combine the cauliflower florets, chickpeas, and diced potatoes.
  3. Add turmeric, olive oil, cumin, salt, and pepper to the bowl and mix well until everything is coated.
  4. Spread the mixture on a baking sheet in a single layer.
  5. Bake for 25-30 minutes, or until the vegetables are tender and slightly crispy.
  6. Remove from the oven and garnish with fresh cilantro before serving.

Notes

  • For extra flavor, add garlic or onion to the mixture.
