- 1 head of cauliflower, cut into florets
- 1 can of chickpeas, drained and rinsed
- 2 medium potatoes, diced
- 2 tablespoons of turmeric powder
- 1 tablespoon of olive oil
- 1 teaspoon of cumin
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- Preheat the oven to 400°F (200°C).
- In a large bowl, combine the cauliflower florets, chickpeas, and diced potatoes.
- Add turmeric, olive oil, cumin, salt, and pepper to the bowl and mix well until everything is coated.
- Spread the mixture on a baking sheet in a single layer.
- Bake for 25-30 minutes, or until the vegetables are tender and slightly crispy.
- Remove from the oven and garnish with fresh cilantro before serving.
