Description

Delight in these soft and chewy Almond Cherry Cookies that combine sweet cherries and rich almonds for a perfect treat.


Ingredients

  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon almond extract
  • 2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup chopped cherries (fresh or maraschino)
  • 1/2 cup chopped almonds

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cream together the softened butter and granulated sugar until smooth and fluffy.
  3. Beat in the egg and almond extract until fully integrated.
  4. Whisk together the all-purpose flour, baking powder, and salt in another bowl.
  5. Gradually add the dry mixture to the creamed mixture, stirring until combined.
  6. Fold in the chopped cherries and almonds gently.
  7. Drop rounded tablespoons of dough onto ungreased baking sheets, spacing them about 2 inches apart.
  8. Bake for 12-15 minutes or until edges are lightly golden and centers remain soft.
  9. Allow to cool on wire racks before serving.

Notes

For a dairy-free version, substitute butter with a dairy-free alternative. Experiment with different nuts or add chocolate chunks for variety.
