- 2 pounds chicken breasts (boneless, skinless)
- 1 can black beans (drained and rinsed)
- 1 can corn
- 1 can diced tomatoes with green chilies
- 1 packet taco seasoning
- 1 cup chicken broth
- 1 cup cooked rice
- 1 cup shredded cheese (optional)
- Chopped cilantro for garnish (optional)
Instructions
- Layer your chicken at the bottom of your slow cooker.
- Add the black beans, corn, and diced tomatoes with their juices.
- Sprinkle taco seasoning evenly over everything.
- Pour chicken broth over the top and gently stir.
- Cover and set your crock pot to low for 6-8 hours or high for 3-4 hours.
- Once cooking time is up, use two forks to shred the chicken.
- Stir in the cooked rice and shredded cheese if using.
- Add cilantro for garnish before serving.
