Description

A comforting and satisfying casserole with layers of hash browns, crispy bacon, eggs, and melted cheddar cheese, perfect for brunch or breakfast.


Ingredients

  • 3 cups Hash Browns (frozen or fresh grated)
  • 6 slices Bacon
  • 6 Eggs
  • 1 cup Cheddar Cheese (shredded)
  • 1/2 cup Milk
  • Salt and Pepper (to taste)
  • 1 Onion (diced, optional)
  • 1 Bell Pepper (diced, optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cook the bacon in a large skillet over medium heat until crispy. Remove and crumble into pieces.
  3. Sauté the onion and bell pepper in the same skillet until softened.
  4. Combine the hash browns, bacon, sautéed veggies, eggs, milk, salt, and pepper in a mixing bowl.
  5. Transfer the mixture to a greased baking dish, top with cheddar cheese.
  6. Bake for 45-50 minutes until the eggs are set and the top is golden brown.
  7. Cool slightly before serving.

Notes

This casserole can be prepared the night before and baked in the morning for convenience. Customize the vegetables as per your preference.
