- 3 cups Hash Browns (frozen or fresh grated)
- 6 slices Bacon
- 6 Eggs
- 1 cup Cheddar Cheese (shredded)
- 1/2 cup Milk
- Salt and Pepper (to taste)
- 1 Onion (diced, optional)
- 1 Bell Pepper (diced, optional)
Instructions
- Preheat your oven to 350°F (175°C).
- Cook the bacon in a large skillet over medium heat until crispy. Remove and crumble into pieces.
- Sauté the onion and bell pepper in the same skillet until softened.
- Combine the hash browns, bacon, sautéed veggies, eggs, milk, salt, and pepper in a mixing bowl.
- Transfer the mixture to a greased baking dish, top with cheddar cheese.
- Bake for 45-50 minutes until the eggs are set and the top is golden brown.
- Cool slightly before serving.
Notes
This casserole can be prepared the night before and baked in the morning for convenience. Customize the vegetables as per your preference.
