Description

A comforting dish featuring tender pork medallions in a luscious apple cider sauce served alongside creamy mashed sweet potatoes.


Ingredients

Scale
  • 4 Pork Medallions or Chops
  • 1 cup Apple Cider
  • 2 cloves Garlic, minced
  • 1 tsp Thyme or Rosemary (fresh preferred)
  • 3 tbsp Butter
  • 4 Sweet Potatoes, peeled and cubed
  • Salt, to taste
  • Pepper, to taste

Instructions

  1. Season the pork medallions with salt and pepper on both sides.
  2. Heat a skillet over medium heat and melt butter until foamy.
  3. Sear the pork for 4-5 minutes each side until golden brown.
  4. Remove the pork and let it rest to redistribute juices.
  5. Sauté garlic and herbs in the same skillet until fragrant.
  6. Pour in apple cider, scraping up bits, and let it simmer for 3-4 minutes.
  7. Return the pork to the skillet and let simmer until cooked through (internal temp 145°F/63°C).
  8. Boil sweet potatoes in salted water until tender, then mash with butter, salt, and pepper.
  9. Serve pork over mashed sweet potatoes, drizzled with sauce.

Notes

Make-ahead tips: Prepare sweet potatoes in advance. Cooked pork can be reheated for better flavor.
