- 4 Pork Medallions or Chops
- 1 cup Apple Cider
- 2 cloves Garlic, minced
- 1 tsp Thyme or Rosemary (fresh preferred)
- 3 tbsp Butter
- 4 Sweet Potatoes, peeled and cubed
- Salt, to taste
- Pepper, to taste
Instructions
- Season the pork medallions with salt and pepper on both sides.
- Heat a skillet over medium heat and melt butter until foamy.
- Sear the pork for 4-5 minutes each side until golden brown.
- Remove the pork and let it rest to redistribute juices.
- Sauté garlic and herbs in the same skillet until fragrant.
- Pour in apple cider, scraping up bits, and let it simmer for 3-4 minutes.
- Return the pork to the skillet and let simmer until cooked through (internal temp 145°F/63°C).
- Boil sweet potatoes in salted water until tender, then mash with butter, salt, and pepper.
- Serve pork over mashed sweet potatoes, drizzled with sauce.
