Description

Ingredients

  • 2 cups masa harina
  • 1 1/2 cups warm water
  • 1 teaspoon salt
  • 2 tablespoons vegetable oil (plus more for frying)
  • 2 cups shredded chicken or beef (or your choice of filling)
  • 1 onion, diced
  • 1 cup chopped fresh cilantro
  • Lime wedges (for serving)

Instructions

  1. Combine the masa harina, warm water, salt, and vegetable oil in a large bowl. Knead until a soft, pliable dough forms (3-5 minutes).
  2. Divide the dough into 12 pieces, rolling each into a ball and then flattening it into a disc about 1/4 inch thick.
  3. Heat vegetable oil in a skillet over medium-high heat.
  4. Fry the gorditas in batches for 2-3 minutes on each side until golden brown.
  5. Drain cooked gorditas on paper towels to remove excess oil.
  6. Cut each gordita in half to create a pocket, then fill with your choice of chicken or beef, diced onions, and cilantro. Serve with lime wedges.

Notes

Make-ahead tip: You can prepare the dough in advance and store it in the fridge for up to 24 hours. Cooking alternatives: Cook gorditas in an air fryer at 375°F for 8-10 minutes or bake them at 400°F for 15-20 minutes.
