This dish combines succulent chicken breasts with orzo pasta, roasted strawberries, and whipped feta, all drizzled with a balsamic glaze for a deliciously sophisticated meal.

- 2 chicken breasts
- 1 cup orzo pasta
- 1/2 cup balsamic vinegar
- 2 tablespoons olive oil
- 1 cup strawberries, hulled and halved
- 1/2 cup feta cheese
- 1/4 cup fresh basil, chopped
- Salt and pepper, to taste
Instructions
- Preheat your oven to 400°F (200°C). On a baking sheet, toss the halved strawberries with olive oil, a pinch of salt, and a sprinkle of pepper. Roast them for about 15 minutes until they become beautifully caramelized.
- Meanwhile, bring a pot of salted water to a boil. Add the orzo and cook according to package instructions until al dente. Drain and drizzle with a bit of olive oil and a pinch of salt.
- In a heated skillet, cook the chicken breasts for about 6-7 minutes on each side until golden brown and fully cooked. Let them rest to lock in juices.
- Pour in the balsamic vinegar in the same skillet and simmer until it thickens to a silky glaze, about 3-4 minutes. Return the browned chicken to the skillet, coating each piece.
- Blend the feta cheese with a splash of water and a pinch of salt until smooth.
- In a serving bowl, combine the cooked orzo, roasted strawberries, and chopped basil. Lay the glazed chicken on top and finish with whipped feta. Serve warm.
Notes
Make-ahead tips: You can roast the strawberries and cook the orzo a day in advance. Store separately and reheat when ready to serve.
