Description

Ingredients

  • 2 cups cooked rice
  • 1 cup mixed vegetables (carrots, peas, bell peppers)
  • 1 cup protein of choice (chicken, shrimp, or tofu)
  • 2 tablespoons mayo
  • 2 tablespoons sriracha
  • 2 tablespoons sweet chili sauce
  • 2 green onions, sliced
  • Salt and pepper to taste
  • 2 tablespoons oil for frying

Instructions

  1. Heat the oil in a skillet over medium heat until it shimmers.
  2. Add the mixed vegetables and protein. Sauté for about 4-5 minutes.
  3. Stir in the cooked rice, breaking apart any clumps gently.
  4. Combine the mayo, sriracha, and sweet chili sauce in a small mixing bowl.
  5. Drizzle the sauce over the rice mixture, stirring well.
  6. Season with salt and pepper to taste.
  7. Cook for another 2-3 minutes, stirring gently.
  8. Garnish with sliced green onions and serve hot.

Notes

Use day-old rice for best texture. Feel free to customize with different veggies or proteins.
