Ingredients
Scale
- 2 cups heavy cream
- 1 cup whole milk
- 3/4 cup granulated sugar
- 4 large egg yolks
- 2 tablespoons gelatin
- 1 teaspoon vanilla extract
- 1/4 cup cold water
Instructions
- Pour 1 cup of heavy cream, milk, and half of the sugar into a medium saucepan over medium heat. Gently stir and heat until it begins to simmer.
- Whisk your egg yolks with the remaining sugar in a large mixing bowl until smooth.
- Reduce the heat and gradually whisk the milk mixture into the egg yolk mixture, whisking constantly to prevent curdling.
- Return the combined mixture to the saucepan and cook over low heat, stirring continuously until it thickens.
- Bloom the gelatin in a small bowl by sprinkling it over the cold water, letting it sit for about 5 minutes.
- Stir the bloomed gelatin into the warm custard mixture until fully dissolved.
- Let the custard cool to room temperature, then gently fold in the remaining heavy cream and vanilla until combined.
- Pour the mixture into serving dishes and refrigerate for at least 240 minutes, or until set.
Notes
Make-ahead dessert: Bavarian Cream can be refrigerated for up to three days. Consider flavor variations like lavender or citrus for added depth.
