Description

A comforting bowl of BBQ pulled pork served over creamy roasted sweet potatoes, delivering a delightful blend of flavors and textures that will warm your heart.


Ingredients

  • 2 medium sweet potatoes
  • 2 lbs pork shoulder
  • 1 cup BBQ sauce
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Optional toppings: Green onions, cilantro, shredded cheese

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Prepare the sweet potatoes by washing and poking several holes with a fork. Coat lightly with olive oil, add salt and pepper, then place on a baking sheet. Roast for about 45 minutes, or until fork-tender.
  3. Season the pork shoulder generously with salt and pepper.
  4. Sear the pork in a pan over medium heat for about 4-5 minutes per side until browned.
  5. Transfer the seared pork to a slow cooker, pour BBQ sauce over it, and cover. Cook on low for 8 hours.
  6. Once sweet potatoes are cooked, cut them open and fluff the insides with a fork.
  7. Assemble your bowls by placing pulled pork over each sweet potato and topping with your favorite garnishments.

Notes

Feel free to swap pork for jackfruit for a plant-based twist or customize toppings to suit your taste.
