Description

A luscious blackberry honey ice cream that combines the sweetness of ripe blackberries and honey, creating a creamy delight perfect for summer days.

Ingredients

Scale
  • 2 cups fresh blackberries
  • 1 cup honey
  • 1 cup heavy cream
  • 1 cup whole milk
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Blend and strain: Place the fresh blackberries into a blender and puree until smooth. Strain through a fine mesh sieve into a bowl to remove seeds.
  2. Mix together ingredients: In a large mixing bowl, combine the blackberry puree, honey, heavy cream, whole milk, vanilla extract, and a pinch of salt. Whisk until smooth.
  3. Churn: Pour the mixture into your ice cream maker and churn according to the manufacturer’s instructions.
  4. Freeze: Transfer the churned ice cream to an airtight container and freeze for at least 240 minutes to firm up.
  5. Serve and enjoy: Scoop into bowls and consider topping with extra blackberries or a drizzle of honey.

Notes

Make-ahead tip: Prepare the blackberry puree and store it in the fridge a day in advance. For those without an ice cream maker, freeze the mixture in a shallow dish, stirring every 30 minutes.
